Raw bergamot fibers – Pastazzo

Raw bergamot fibers (pastazzo) are a by-product of the food processing industry consisting of the waste from squeezed bergamot fruits.

It has several uses, the most well-known being organic fertilization of soil, animal feed, and extraction of pectin, a naturally occurring polysaccharide thickener in fruit, widely used in the production of jams.

It can be used fresh or dried, after pressing, a process that cuts costs related to storage and transportation.
